Coconut Date Macaroons:
- 8 dates (soak for 30 minutes before beginning)
- 1 medium banana, cut into quarters
- 1 cup unsweetened coconut
- Preheat oven to 325 degrees.
- Dry outside of dates and remove pits, cutting dates into quarters.
- Place dates and banana in a blender or food processor.
- Blend until a smooth paste-like consistency.
- Remove from blender and mix with coconut in a medium sized bowl.
- Using a small cookie scoop or spoon, scoop about 1 tablespoon of dough at a time and roll into small balls.
- Place dough balls on parchment lined cookie sheet.
- Bake for 10-15 minutes, until golden brown on the bottom.
- Makes approximately 18 macaroons.
