Coconut Date Macaroons:

Ingredients:

  •     8 dates (soak for 30 minutes before beginning)
  •     1 medium banana, cut into quarters
  •     1 cup unsweetened coconut

Directions:

  •     Preheat oven to 325 degrees.
  •     Dry outside of dates and remove pits, cutting dates into quarters.
  •     Place dates and banana in a blender or food processor.
  •     Blend until a smooth paste-like consistency.
  •     Remove from blender and mix with coconut in a medium sized bowl.
  •     Using a small cookie scoop or spoon, scoop about 1 tablespoon of dough at a time and roll into small balls.
  •     Place dough balls on parchment lined cookie sheet.
  •     Bake for 10-15 minutes, until golden brown on the bottom.
  •     Makes approximately 18 macaroons.
